Viral Tiktok Hot Honey Bowls with Tofu Sofritas

I wanted to recreate the viral hot honey beef bowls from Tiktok BUT wanted to make it plant based with tofu sofritas! I don’t use Tiktok but this is what the cool kids have told me!

Have you had the tofu sofritas at Chipotle? That’s my inspiration here! Tofu is very plain (like all proteins initially, right?) and needs to be seasoned up! It’s the best beef subsitute!

This isn’t so much a recipe, but a template! Scale up or down as you’d like. I’m solo but always scale up because multi-meals or planned leftovers FTW.

Houseplants not included!

Ingredients:

extra firm tofu (1/2 cup cooked sofritas per bowl)

sweet potatoes, roasted, skin removed, and cubed (1/2 - 3/4 cup chopped per bowl)

avocado, cubed (1/2 cube avocado per bowl)

cottage cheese (1/2 cup per bowl)

hot honey (go with your fav brand or infuse your own - I didn’t love the Trader Joe’s version)

yellow onion, chopped

Sofritas Recipe:

Basically make your own chili powder - OR use a pre-made packet). We’re controlling the sodium amount by making our own.

Also, you might be like me and have all of the spices on hand… so why spend the extra money? If not, buy the packet as buying these spices will be more money.

A lot of other recipes use a blender to combine the sofritas ingredients below into one homogenous mixture before mixing it with the tofu…. I opted to NOT do this to save time and energy.

Ingredients:

olive oil, you decide

white vinegar - as needed for liquid

1/2 can of the small 6 oz. of tomato paste

1 tsp. cumin

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. smoked paprika

1 tsp. dried coriander

1 tsp. dried oregano

Directions:

  1. Roast sweet potatoes in the oven (350F for an hour does the trick. I put them in a glass casserole dish with some water on the bottom and poke tiny holes with a knife so they cook faster). Let them cool them cube them.

  2. Combine all of the dry spices in a bowl and mix to combine.

  3. Add oil to skillet to saute the yellow onion. As you’re sauteing the onion, crush the tofu with a fork into tiny clumps to resemble ground beef. Remove onion from skillet and set aside.

  4. Add tofu to skillet on medium heat with evoo. Then add tomato paste. Stir and add the spices. Add the vinegar to combine - enough to make sure spices are throughly combined. Mix in the sauteed onion.

  5. Add all of the ingredients to your dinner plate/bowl like shown above - suggestions serving sizes below:

    Bowl Assembly:

    6 oz. sofritas

    4 oz. sweet potatoes (increase 6-8 oz if you’re an endurance athlete in training!)

    4 oz. cottage cheese

    1/2 cubed avocado

    Drizzle hot honey as desired. Enjoy!
